Ingredients:
9 cups chicken stock
5 halves of chicken breast, skinless
1 large red onion, chopped into quarters
5 cloves of garlic, chopped
2 teaspoons dried oregano
1 teaspoon of salt
1 teaspoon ground black pepper
1/2 teaspoon dried thyme
1 tablespoon of vegetable oil
4 green onions, chopped
1 large green chilli, peeled and chopped
2 large tomatoes, peeled and chopped
6 lemons or limes, squeeze juice
1/2 lime
1/2 cup chopped fresh cilantro chips or tortilla slices for serving
Cooking:
Bring the chicken stock with chicken breasts, red onion, garlic, oregano, salt, pepper and thyme to a boil in a large saucepan, reduce heat to medium-low and cook until the chicken breasts are pink in the center and the juice is clear, from 15 to 20 minutes.
