Ingredients:
1 cup wheat flour
2 cups of milk
3 eggs olive oil
300 ml thick cream, whisk
2 teaspoons powdered sugar mix, sift
1 teaspoon vanilla extract
250 g strawberries, peeled, cut in half strawberries and icing sugar to serve
Cooking:
Sift flour into a bowl.
Mix milk and eggs together in a jug.
Add the milk mixture to the flour.
Beat until you get a homogeneous mixture without lumps. Lubricate the non-stick pan with oil.
Heat over medium heat.
Pour 2, 1/2 tablespoons of dough into the pan.
Spread evenly over the base of the pan.
Fry for 2 to 3 minutes or until light golden.
Turn over and fry for another 1 minute.
Put in a plate.
Cover to warm.
Repeat with the remaining dough. Combine cream, icing sugar and vanilla in a bowl.
Put 1/3 cup of cream 1 in each pancake.
Garnish with strawberries.
Roll up, putting the stuffing inside.
Repeat with remaining pancakes and cream. Sprinkle pancakes with powdered sugar.
