Stuffed zucchini in the form of flowers.
How to cook? Recipe.
Ingredients:
18 zucchini colors
8 olives, cut in half, pitted
2 anchovies
8 small basil leaves
200 g of fresh cottage cheese
Vegetable or light olive oil, for deep fat
Lemon slices to serve
For batter:
100 g wheat flour
1 tablespoon of olive oil
150 ml chilled light beer
1 egg white
Cooking:
Gently take zucchini flowers under the head, using your fingers to make an incision in the center of the flower.
Use your fingertips to pull out and discard the yellow stamens in the center of the flower.
Repeat with the rest of the colors. Finely chop olives, anchovies and basil.
Place in a bowl with cottage cheese and season to taste with pepper.
Put a teaspoon of the curd mixture in the center of each flower, then twist the ends of the petals to insert the filling.
To make batter, mix flour and 1/2 teaspoon of salt in a bowl.
Add butter and beer, whisk until a uniform dough is obtained.
In another bowl, beat the egg whites until a soft foam forms, then gently add to the dough. Cover the tray with paper towels.
Fill a deep pan or deep fryer with oil one third, then heat over medium heat to 180º C. Work in batches of 4 flowers, first dip 1 in the dough, letting the excess fat drain and then deep-fry for 2 minutes or until golden brown.
. Using a slotted spoon, transfer to a tray.
Repeat with the remaining dough and colors.
Season with salt and serve with lemon wedges.
