Ingredients:
3 potatoes, peeled
170 g chopped bacon
1/2 cup chopped onion
1/2 cup chopped green pepper
1 teaspoon chopped garlic
1 cup chopped fresh tomatoes salt and pepper to taste
170 g grated cheddar cheese
8 eggs
Cooking:
Bring the pot of salt water to a boil.
Add potatoes and cook until soft, but still firm, about 15 minutes.
Drain, cool and cut. Place the bacon in a large deep frying pan.
Fry over medium heat until evenly browned.
Add onions, peppers, garlic, tomatoes and potatoes.
Season with salt and pepper and cook until the vegetables are soft, for about another 5 minutes. Sprinkle the vegetable mixture with cheese.
Drive eggs into the pan at a distance of a couple of inches, you can beat as for an omelet and just pour.
Cover the pan and let the eggs cook to the desired hardness, as you like.
Remove the pan from the heat and can be served. This dish is very convenient if you need to prepare breakfast for many people.
You can do all the preparatory work on the night before serving, and you will need little effort in the morning.
