Cooking time: 30 minutes.
• For 1 liter of jelly we will need: red currant - 1 kg
• black currant -7 kg
• sugar - 2 kg.
Currant Jelly Recipe:
1. Berries washed in cold water, sort through, removing leaves and petioles.
Lay them on a flat surface and leave them for 30-40 minutes, so that they dry well. 2. Put the currants in a saucepan, pour water so that the berries are barely covered, and cook until the currants become slightly soft.
Remove from heat and cool. 3. Press the berries through cheesecloth or mash through a sieve.
Do not throw out the cake (it can be dried in the oven and added to tea). 4. Pour sugar into the resulting juice and mix.
You need to stir it with a wooden spoon, since from the contact of the metal with the juice of currant, vitamin C is destroyed and there will no longer be any benefit from jelly.
5. Bring the juice to a boil and cook over medium heat for 7-10 minutes.
6. Pour juice into sterilized jars, close them with plastic lids and leave until the jars have cooled.
Then put it in the refrigerator for storage. Juice is gelled the very next day.
