Ingredients:
1 (about 1.5 kg) pumpkin, cut lengthwise, peel, select the inside, thinly chop
1/4 cup (60 ml) olive oil
3 red onions, sliced wedges
300 g spinach leaves
200 g feta cheese, chopped
1 tablespoon whole grain mustard
2 tablespoons of red wine vinegar
Cooking:
Preheat the grill.
Lubricate the pumpkin slices with a little oil, season with salt and pepper.
Grill for 1 minute on each side or until tender.
Transfer to a plate.
Add onions and grill, turning, for 2 minutes or until the onions are soft.
Remove from heat. Place spinach, feta cheese, pumpkin and onions in a large salad bowl.
Combine the mustard, vinegar and remaining oil in a screw jar and shake until well mixed.
Sprinkle the resulting dressing over the salad and serve immediately.
It will go well with meat or grilled sausages and is perfect for a pool party.
