Seafood Lasagna Recipe

Ingredients:

1 tablespoon of olive oil

3 cloves of garlic, chop

500 g of seafood in marinade

1/4 cup (60 ml) white wine

2 tablespoons fresh dill, chopped

Salt and freshly ground black pepper

1 bunch of English spinach, trim and chop

3 sheets of fresh lasagna, cut each sheet into 4 rectangles

2 tablespoons low-fat mayonnaise

Grated peel of 1 lemon

Extra chopped dill to serve

Cooking:

Heat the oil in a pan over medium heat.

Add garlic, cook 1 minute.

Add seafood, cook over high heat, stirring, for 3-4 minutes, until just cooked.

Add wine and dill, simmer for 1 min.

Remove from heat and season. Bring a large pot of water to a boil.

Blanch the spinach for 1 min, remove and rinse in cold water.

Boil pasta over high heat for 2-3 minutes or until tender, strain and place on a baking sheet. Mix mayonnaise and lemon zest.

To serve, put a sheet of lasagna on each dish.

Then make a layer of seafood, spinach and finish with the remaining sheet of lasagna.

Serve with a spoonful of mayonnaise, dill and freshly ground pepper.
