Ingredients:
2 tablespoons of olive oil
2 medium zucchini, trim, chop finely
7 eggs
235g (1 cup) sour cream
2 tablespoons finely chopped fresh dill
1 x 220 g pack of smoked salmon
1/2 bunch watercress, rinse, drain
Cooking:
Heat half the oil at 20 cm in the base of a non-stick pan over medium heat.
Add zucchini and fry, stirring, for 5 minutes or until golden brown. Lay on a plate laid out with a paper towel.
Dry the pan. Beat eggs and 65 g (1/4 cup) sour cream in a bowl.
Season with salt and pepper. Add a mixture of zucchini and half dill. Heat the remaining oil in a pan over medium heat.
Pour the egg mixture into the pan. Reduce the heat to a minimum and fry for 6-7 minutes or until the frit is baked along the edge, but still liquid in the center. Meanwhile, preheat the grill.
Place the pan on the grill and cook for 3–4 minutes or until the frit is golden brown and ready. Combine the remaining sour cream and dill in a small bowl.
Cut fries into 6 wedges. Divide between serving plates.
Garnish with salmon slices, a mixture of sour cream and watercress on top to serve.
It takes about 20 minutes to cook this dish.
